You can select subtitle through "Subtitle"
list and you can adjust video quality , audio quality
and audio volume on the right advance settings panel.
Tips: The Video Quality is higher ,
the size of output file is bigger.

Click "Converter" button and start ripping
the titles or chapters you checked.
Step.6
After completed, you can find the files by clicking
the "Open"button . Launch iTunes and choose
"File ->Add File to Library"Choose the
video files you ripped. Click on "Videos"
in the left column and double click on your file to
make sure the video works. Load it on your video iPod.
